Green Citrus Spinach Smoothie

I do not like yoga, hot tea, or green smoothies. This is by no means an exhaustive list of things I don’t like, but these are apparently very vegan-y things in the eye of public opinion, because people are always surprised to learn the extent to which I hate yoga and chamomile.

 But I made orange creamsicle smoothies for my friends at Champion last week, and I had a bunch of frozen citrus leftover, along with a bag of spinach, so I tried making a green smoothie for the first time.

I wasn’t expecting to like this, but I actually did! (Otherwise I wouldn’t post it for you.)

I think the color had a lot to do with it.  It was a light lime green, frothy, and the citrus flavors stood out more than the spinach. I drank it after a long run on one of the amazing 50 degree days we had last week in Boston.

But we just got another foot of snow this morning, so I held off on the frozen drinks today and drank about 500 cups of coffee instead.

The snow was really pretty this morning, but still, nobody wanted it around. That’s when you know you’re unwelcome.

Citrus Spinach Smoothie

.
Ingredients:
  • 1/2 frozen grapefruit
  • 1-2 cups of spinach
  • 1/2 banana
  • juice of 1/2 lime
  •  3/4 cup Almond milk (original flavored)
Instructions:
  • Freeze grapefruit and banana in small pieces
  • Blend, adding more almond milk if necessary.
  • Serve immediately!
